Apparently, I CAN bake!  Yay!  Mama documented my attempt at making her Sans Rival (hence the blurry pictures).  I think she couldn't quite believe what she was seeing herself.  Granted, she helped me a lot, but I really did a lot of this on my own.  She gave me a pop quiz after and I answered ALL the questions :D

See, this is how to make mama's Coffee Sans Rival (her cousin, my Tita Pacit, actually gave her this recipe).  Sorry, it's not step by step... we were kinda busy...


Measure the ingredients.  Note that the coffee has to be Cafe Puro.  I'm not exactly sure why, but it's the way it's done in my family.  Besides, I just follow the recipe... I don't ask questions :D



Put the ingredients together to make the meringue.  Spread the meringue onto the foil.  Spread cashews on top.



I really like spreading cashews.  Hehe.  After that, you pop it in the oven and while it's baking, you make the icing... which consists of, among other things, a WHOLE bar of butter!  Egad!  i didn't know it consisted of so much butter! 


Then you assemble the meringue and the icing and the cashews into a cake that looks like this, freeze it for a while, and TA-DA!  You have Coffee Sans Rival!


I thought the finished product was a bit sweeter than usual, but Mama said it tasted okay. 

So... to all those who didn't believe I could do it.. WALA KAYONG SANS RIVAL NGAYONG PASKO!  Hahahahahahaha!  :D

:D Looks good Inez! Didn't realize it had real coffee. A sweeter alternative to caffeine.... :) Dibs..

Yup! The coffee makes it less sweet than the normal sans rival :) 1 tablespoon for the meringue, 2 tablespoons for the icing :)

oh! you can give your mom silpat mats to use for that pala! easier pa so she doesnt have to use aluminum paper.

Lorr - Mama uses the foil because if the meringue is in a pan, it tends to crack if taken out. So we actually just form a tray with the foil and put that on top of an inverted baking pan and bake the meringue on the foil. So when it's done, we just peel off the foil :) Hmm. I think I will have to show it to you so it will make sense. I Googled Silpat mats... they look interesting...

Ri - No I'm not... The whole process just stuck to me. And I typed the entire recipe before this so I pretty much knew it :)

oh, i remember your mom's sans rival from when you and your mom were here. that was really quite good! it's a high standard your mom sets, so if she said it tasted okay you must've done quite well.

can your mom make crispy pata, too? :-)

Pao - That was quite a big piece you finished last time :) Yes, mama can make crispy pata. Sabi niya, madali lang daw yun. Yabang noh? Hahahaha! Hingi ka sa kanya ng crispy pata pag dating mo -- makikihingi na lang ako sa iyo :P

no its just to cover the pan so it won't stick. it'll be easier to remove meringue. oo inez super dali lang ng crispy pata!
